As mentioned in my previous blog post (which you can read here), I am trying my best to make healthier choices with my diet, but my no means does it stop at breakfast!
Since eating a little healthier I have been conscious of a number of carbohydratesI eat and when I do eat carbohydrates I want them to be the best for my body – so those complex carbs, which is anything wholemeal.
This recipe is not just for those health conscious foodies but anyone who just has a real hankering for some pizza!
Of course, you do not have to follow this recipe to the tee, take what you like and swap in what you do not like! You can add so many different toppings (e.g. ham and pineapple, chorizo, chicken, etc.) so this can be adapted to suit what you like or what you have in your kitchen cupboards.
Now, for that pizza craving…
1 wholemeal pitta bread (whole, not sliced)
Pesto (I used green here but use red if you prefer)
Handful of cheese (grated if cheddar, you can use mozzarella instead)
1 tsp mixed herbs
Sprinkle of black pepper
Then load with the toppings of your desire!
I started by tosating the pitta bread, it makes for a better ‘base’.
Season before grill, here I used black pepper and mixed herbs.
Grill for 4-6 minutes
I can see myself having this even when I go back to University as it is so simple but dead cheap – a students dream!
