What I Ate Today #1

The nosy person which I am, I love to watch and read vlogs and blog posts about what a person eats in a day. I have a real love for food, I don’t mean piling my plate with sugar and salt ladened foods but nutritious and fresh foods. I suppose it is a mix of love for food and nosey quality, is why I love to see what other people are eating!

For me, I love watching Anna Saccone’s ‘What I Ate Wednesday’ vlogs because she is so sweet and her health-conscious food choices reflect that of my interest. But vlogging isn’t really my style so I hope you enjoy this post!

*Disclaimer: I am not a nutritionist but this is what I typically eat in a day, I’m not suggesting that you should eat the same and I’m not saying that how I eat is the right way to eat. This is just what I eat, so please respect that:)

Breakfast:

I made a smoothie with pineapple mango and some apple juice, it was a small portion because I didn’t have that much fruit in the house but it was really delicious! Using my beloved Nutribullet of course!

Because the smoothie was quite small I decided to do some porridge as well, I don’t always have this but today I decided to have a change.

I just used rolled oats, chia seeds (soaked in water for 5 mins prior), half soya milk and water and cinnamon. Popped it in the microwave for a minute and then topped with pumpkin and sunflower seeds to make it extra filling and also sultanas for some natural sweetness.

Lunch:

Lunch was really simple because from time to time I like to keep it simple and quick! So I just went for a classic: a piece of toast. Everything else is pretty self-explanatory!

Afternoon:

Just some water and tea to stay hydrated, Earl Grey tea is my go to for a caffeine pick-me-up, I take it fairly strong with a dash of soya milk.

Side note: I love this mug, childhood nostalgia.

Dinner:

Last night I just wanted something quick and simple – an omelette it was. They are honestly so easy to make and if you season right, can be really tasty!

For the filling, I sliced 1/4 green pepper, 2 cherry tomatoes, red onion and one garlic clove. I used two eggs seasoned with salt, pepper, mixed herbs and fresh basil and mixed it with a dash of soya milk.

Started with lightly frying the veg and then added the egg mixture, cook on both sides for 2-3 mins and voila!

This is no way at all the most attractive omelette which can be made, but it tasted lovely despite its ugly exterior…

So that’s it! My first ‘What I Ate Today’. What I eat every day depends on what I can be bothered to cook, or what everyone else is eating. However, I always try to go for fresh choices and flavoursome meals because it is what I like and my body likes ha!

    I absolutely love reading people’s eating diaries Holly and yours seems so healthy I swear if I was to do mine I think I’d give myself a heart attack .. you should do these more often 🙂

      I love reading them too- I’m so nosey! Haha don’t get me wrong I love a dominoes, chocolate and all that also! I hope to do them at least once a month if not more! 🙂
